Our meat is priced based on the total hanging weight of each cow. After the cow is butchered, it is then dry-aged for 21 days, processed, and packaged at a USDA facility. The finished packaged product is a "Standard" butchers cut and is right around 60% of the original hanging weight. For Example: 1,000lb Hanging weight = 600lbs of Finished Packaged Beef. Your finished weight is then broken down evenly into 4 quarters of which you can buy a 1/4, a 1/2, or a whole.
